O envelhecimento prolongado resulta em uma textura suave, com aromas de frutas secas e notas leves de nozes, além de um umami profundo e arredondado. O valor SMV é +7 e a acidez é 1,8, expressando um caráter seco e amadurecido, melhor apreciado em temperatura ambiente ou levemente aquecido.
