Yamada Nishiki polido a 40% em um daiginjo com o nome de Mori Ogai, o célebre romancista e médico da era Meiji nascido em Tsuwano. A destilaria, fundada em 1791 (Kansei 3) na cidade castelo de Tsuwano, Shimane, conta com um poço profundo apesar do relevo elevado, e produz sake reconhecido por um sabor pleno e marcante, adequado a uma ampla variedade de culinárias.
