Kodaimai Akamaishu é um sake elaborado com variedades antigas de arroz vermelho na Noda Shuzo na Prefeitura de Fukuoka. O arroz vermelho, anterior às variedades brancas polidas modernas, produz um sake de tonalidade avermelhada, distinto e terroso, com um perfil de sabor profundo e rico em minerais.
