Honjozo com polimento de arroz a 70%, produzido pelo método de gotejamento. O hiyaoroshi é um sake drenado no início da primavera, armazenado e envelhecido na kura até ficar arredondado. O nome vem do frescor do início do outono, quando o sake é liberado ao mercado, resultando em um sabor amadurecido e equilibrado.
