Yamahai jikomi sem ácido lático ou fermento comercial adicionado define este junmai da Uehara Shuzo, em Shiga, onde o fermento selvagem cultivado internamente e três dias de prensa kioke tenbin de barrica de madeira resultam em um sake de umami profundo e concentrado com a acidez característica do yamahai. O resultado é uma bebida de estrutura rica que se abre ainda mais com o calor.
