O Shinkai Tokubetsu Junmai Yamahai Jikomi 701 da Fujimoto Shuzo em Koka, Shiga, utiliza o método yamahai, uma versão simplificada da antiga abordagem kimoto que ainda depende de bactérias lácticas naturais sem agitação mecânica. Produzido com a água suave do poço do Santuário Yamamura, dentro da propriedade da destilaria, a mesma fonte milagrosa que inspirou o nome Shinkai (Aberto pelo Divino) por volta de 1766, oferece a acidez natural e o corpo rico característicos da fermentação yamahai.
