Rate this sake
🍶
Description

Bottled as shiboritate-nama (freshly pressed, unpasteurized), this 65%-polished honjozo captures the seasonal vibrancy of new-season pressing. The small distilled-alcohol addition typical of honjozo is kept minimal, and Sase-shiki traditional pressing at this Tochigi brewery yields a clean, lively character.

In the first generation, he made his own sake brewing, and started making it with Izumi Nakamurakami (Nakamura Mizumi) for the wonderful water quality. The prepared water is groundwater. The water system is "Nikko Mountain Fushin Water". The motto is "Work is sparing time."
