Yukinobosha Okuden Yamahai is a honjozo brewed via the yamahai method by Saiya Shuzoten in Akita, using Akitasake Komachi and Hitomebore polished to 65%. Yamahai fermentation builds a sturdy, naturally acidic character well suited to warming in the cold Akita winters.
