Yatagarasu Bodaimoto Junmai Kozennoki is brewed using the ancient bodaimoto method that originated in Nara's Shoryakuji temple, one of Japan's oldest and most historically significant fermentation traditions. This technique uses naturally occurring lactic acid bacteria to create a starter with rich, complex character, yielding a sake with earthy depth and gentle acidity. The result is a full-bodied junmai with layers of umami and a pleasantly robust finish.
