Description

The H28BY (2016 brewing year) edition of Suwa Shuzo's yamahai junmai is an undiluted, unpasteurized (namagenshu) expression made from Tama Sakae and Yamada Nishiki at 70% polishing. Yamahai brewing produces a naturally higher acidity and deeper umami structure; as a genshu, this release retains full concentration and the vibrant freshness of an unheated sake.

It is a warehouse located in Chizujuku, a post town where Honjin was used by the lord of the Tottori feudal clan on a change of work. The founding is in Ansei 6 years, and the inscription of Suwa Izumi is derived from Suwa Shrine in the back of the store. The theme of Suwa Izumi is "Happy Dining Table". We propose a happy dining table with alcohol.
