Wakamizu rice grown in the local Tokoname area is polished to 60% for this tokubetsu junmai, then cellar-aged for one year before release as a spring seasonal. Warming in a cup brings out deeper sweetness and complexity, and the sake performs well across a range of temperatures from chilled to hot.
