Daiginjo polished to 40% from a small Chiba brewery that presses all its sake using the traditional fune-shibori method, drawing on spring water from Mt. Atago near the historic Kururi castle town. The brewery uses Chiba-grown rice for most of its lineup and maintains nearly fully handcrafted production.
Highly aromatic and elegant, with added alcohol to enhance floral notes.
