Description

Tanaka Rokujugo is the flagship label of Shiraito Sake Brewery in Itoshima, Fukuoka, named for the eighth-generation head brewer Katsunori Tanaka and built entirely on locally grown Itoshima Yamada Nishiki polished to 65%. Every batch is pressed using the rare hanego-shibori method, a traditional lever-press system using a single wooden beam that extracts the moromi slowly and gently, yielding a smooth texture with layered rice umami and a crisp, clean finish.
