Takaonotengu is a collaborative pure-rice ginjo from Maihime Co. in Suwa, Nagano, born from a community project using 100% Hachioji-grown sake rice including Miyamanishiki and the local Kinuhikari variety. The sake is cellared at sub-zero temperatures to lock in peak freshness, yielding a soft, rich-umami ginjo with a fragrant ginjo nose, gentle sweetness, and a smooth, clean finish that embodies the spirit of regional craft.
