Taito Junmai Daiginjo is the flagship of Chiyonosono's Kumamoto-origin Taito label, brewed with Yamada Nishiki and Kumamoto yeast using slow, low-temperature fermentation to achieve the refined aromatics and silky texture expected of the daiginjo grade. Kumamoto Prefecture is recognized as a historic center of yeast research, lending this sake a particularly well-developed floral character.
