Brewed at Sohomare in Ichikai, Tochigi, this junmai uses Hyogo Tokka-district Yamada Nishiki polished to 70%, drawn from the Kinu River watershed soft water. Sohomare is one of the highest users of Yamada Nishiki among eastern Japan breweries, and this expression reflects that commitment with a light, clean profile and well-integrated rice umami.
