The Shinken (Heart Key) Junmai Ginjo from Fuji Shuzo in Tsuruoka, Yamagata, uses Dewa Sansan rice polished to 50%, a Yamagata-native variety developed in partnership with Dewazakura brewery that produces clean, mineral-driven sake suited to the prefecture's light, fruity style. From this 1778-founded brewery on the Shonai Plain, it delivers the measured, composed elegance that Dewa Sansan rice uniquely provides.
