Shimanokaori is the flagship label of Tsuda Shuzo on Etajima island, Hiroshima, where the brewery has produced sake since 1893 using Hiroshima's renowned soft-water brewing tradition. This honjozo is dry and well-structured with an approachable umami, suited to warming as well as drinking cold.
