Sen no Rikyu Shiboritate Nama is a freshly pressed, unpasteurized junmai ginjo made with Yamada Nishiki from Hyogo, polished to 55%, at the Sakaiizumi brewery in Sakai, Osaka. Named for the tea master who lived in Sakai, it is bottled without heat treatment using natural spring water from the Kongo Mountains.
