Ryoga Junmai Jukkara Karakuchinama is a boldly dry, unpasteurized junmai from Matsunoi Shuzo in Tokamachi City, Niigata, brewed with Gohyakumangoku koji rice and Koshiibuki table rice, both regional Niigata varieties, and fermented with Kanazawa yeast. The sake meter value of +10 signals extreme dryness, with a sharp, clean acidity and a lean, refreshing finish that cuts through rich food. Rice polished to 65 percent keeps the body light while the nama bottling preserves vivid freshness and a lively, unrestrained character.
