Rokujuuyoshuu Daiginjo from Imazato Shuzo in Hasami-cho, Nagasaki, carries a name meaning more than sixty provinces, evoking the ancient administrative divisions of Japan and the brewery's ambition to represent the nation's sake culture. Nagasaki's brewing tradition draws on the island's maritime history and the clean, soft water of the Kyushu mountains, producing a daiginjo with refined, delicate aromatics. The rice is polished to 50% or below, yielding the hallmark ginjo fragrance and clean, lingering finish of the style.
