Description

Designed with input from sushi chefs, this tokubetsu junmai is built to reset the palate between bites rather than compete with the fish. It avoids being overly sweet or floral, showing notes of rice, cream, banana, and caramel when served chilled. Made from Miyama Nishiki rice polished to 55 percent in Hokkaido, it carries an SMV of +2, acidity of 1.5, and ABV of 15 percent.

"Otoyama" is a local sake brewed by the famous water of Asahikawa, Hokkaido. In 1977, he won the world's first Monde Selection Gold Award for sake. It has been awarded for 40 years since then, and has won many gold prizes at the Japanese and overseas liquor contests and national new sake appreciation.
