Nishinoseki Daiginjo Hizoshu is a prestige daiginjo built from Yamada Nishiki polished to 35%, continuing a tradition that began when this Oita brewery was the first in Japan to commercially release genshu in 1963. The sake reflects the fourth-generation owner's commitment to traditional hand-crafting in a rice category the brewery helped define.

Sake "Nishi -no -Seki" started brewing in 1873 (Meiji 6). The representative brand "Nishi -no -no -Seki" was named in the meaning of the second generation Yone Saburo in the Meiji era, west, west, and Yokozuna in the meaning of Yokozuna.
"Nishinoseki" is inherited and inherited from traditional handmade techniques without being swept away by trends, pursuing the original taste of sake in harmony with sweet, acid, spicy, bitter, and astringency, and transcends sweet spicy. We are aiming for delicious sake brewing.
