Namachozoshu Sansui is a nama-chozo honjozo from Oimatsu Shuzo in Oita Prefecture, stored unpasteurized under cold conditions before a single heat treatment at bottling. The Sansui name, meaning mountain water, reflects the pristine spring water of central Kyushu used in fermentation.
