Honjozo Josen from Kawabata Shuzo is brewed at the brewery's historic Gyoda site, which has used the same cypress-and-cedar buildings since the Edo period. Soft water from the Tone and Arakawa watersheds supports a slightly dry, well-rounded profile described as having good balance of umami, sweetness, and acidity.
