Koikawashuzo Junmai Daiginjo Kameno is brewed with Kame-no-o, a rare heirloom sake rice variety that nearly went extinct before being revived in Yamagata during the 1980s. Kame-no-o ferments into a distinctively complex, slightly wild sake with rich umami and an earthy depth uncommon in modern polished varieties. At Junmai Daiginjo grade, the highly polished Kame-no-o expresses its heritage character with a refined, fragrant elegance.
