Kinmon (Gold Crest) Shiramayumi is an everyday sake made from Hitomebore rice polished to 70%, a variety originally developed in Miyagi Prefecture and prized for its soft, round flavor. Kaba Shuzo's soft alpine water from the northern Japan Alps complements Hitomebore's gentle grain character. Founded in 1704, the brewery draws on over three centuries of Hida sake tradition for even its table-grade offerings.
