From Kikusui Sake Brewery in Niigata's Shibata City, this Junmai Daiginjo uses the revived heirloom Kikusui rice variety, recovered from just 25 seeds in 1997 after disappearing during World War II. The result is a richly aromatic, gently dry pure-rice daiginjo with deep, soft umami best enjoyed slightly chilled.
