Jokigen Daiginjo Nakakumitobinkakoi is a prestige daiginjo from Kano Shuzo in Ishikawa Prefecture, produced using the tobin method where sake is pressed into individual 18-liter bottles to capture the finest middle-draw fraction. This nakakumi (middle-draw) technique isolates the most aromatic and balanced portion of the pressing, making it a highly sought-after bottling from this Kaga-region brewery.
