Description
Houmei Daiginjo from Houmeishuzou in Hyogo's Tanba-Sasayama region represents the brewery's flagship premium expression, with rice polished beyond 50 percent to achieve the refined, fragrant character required of the daiginjo classification. Tanba-Sasayama's cool climate and access to clean water from the Tanba highlands support the slow, low-temperature fermentation needed to develop daiginjo's characteristic floral and fruity aromatics. This 1.8-liter format offers the full daiginjo experience at a generous volume suited to sharing or cellaring.
