Honjozoshu Kajitajo is named after Kajita Castle, a Sengoku-period fortress in Tomika Town, Gifu, and is produced by Matsuiya Sake Brewery in the same town. This honjozo carries the straightforward character of a traditional everyday sake from the inland Gifu brewing tradition, with clean, light flavors and a crisp, dry finish.
