Honjozo Shiki is produced by Oitashuzouten in Gifu prefecture using rice polished to 70% or below, with a small addition of distilled alcohol to enhance aroma and lighten the body. The four-season theme of its name connects the sake to the natural rhythms of Gifu's Hida highland environment. This honjozo offers a clean, slightly dry profile with a crisp finish typical of the style.
