Hokosugi Iseshima Junmai Ginjo - Junmai Ginjo sake from Kawabu Jozo Co.,Ltd, Mie
Description

Kawabu Jozo, founded in 1857 in Taki-cho, Mie Prefecture, has dedicated sake to Ise Grand Shrine for over 160 years and draws water from the Miya River underground system, ranked number one in Japan's water quality surveys more than a dozen times. The brand name Hokosugi, sacred spear cedar, takes its image from the towering cedar trees at the heart of Ise Shrine's precincts. The Iseshima Junmai Ginjo uses locally grown Ise rice and the yamahai method, building a longer, more complex fermentation: soft, round mouthfeel, refined floral aromas, and a mellow acidity that leads into a deep, rounded, lingering finish.
