
Description
Saido (Colorful Road) uses Omachi rice as the main grain and Yamada Nishiki for the koji, brewed kimoto-style at 60-70% polish by Mori Shuzojo in Hirado, Nagasaki. The sake evokes Hirado's sunset sky, shifting from grape-like aromatic richness through soft sweetness and bright acidity to a lingering, subtly astringent finish.
