Description
Hidanotsuwamono (Warrior of Hida) is an everyday sake brewed from Hida Homare at 65% polishing at the 1704-founded Kaba Shuzo in Hida-Furukawa, Gifu. The Hida Homare variety's high starch content builds a full-flavored, umami-forward profile softened by the soft alpine water drawn from beneath the brewery. The name references the renowned mountain craftsmen of Hida, who were historically sent to Kyoto as artisans.
