This daiginjo genshu is a National New Sake Competition Gold Prize winner, brewed under the Shiragiku label to demonstrate peak technical achievement. Competition-grade daiginjo genshu are typically milled to 50% or below, fermented at extremely low temperatures, and bottled undiluted to capture the most refined, highly aromatic expression possible.
