Description

Founded in 1743 in Nada, Kobe, Hakutsuru is Japan's largest sake producer, drawing on the famed Miyamizu hard mineral water of the Rokko Mountains to drive robust fermentation and the clean, dry character that defines Nada's regional identity. This Organic Junmai uses certified organic Calrose rice polished to 70%, cultivated without synthetic pesticides or fertilizers. The Rokko oroshi, the cold seasonal wind that rushes down from the mountains in winter, aids natural cooling during fermentation. The result is dry and crisp with bright citrus on the nose and light umami notes of fresh pear and melon on the palate.
