
Founded in 1743 by the Kano family in Nada, Kobe, Hakutsuru is Japan's largest sake producer, named for the white crane, an auspicious symbol of longevity. Located in Nada, where the famed Miyamizu hard water drives robust fermentation, the brewery accounts for roughly 10% of Japan's entire sake output. The Draft Junmai uses domestic rice polished to 70% and is stored cold as namachozo before a single flash pasteurization at bottling, preserving a fresher character than twice-pasteurized sake. Clean and approachable at 14% ABV, it offers sweet rice and melon aromas, a crisp, medium-dry palate, and a fruit-forward finish that pairs naturally with everyday meals.
