Hakutsuru Choutokusen Junmai Daiginjo Genshu Yamadanishiki is an undiluted junmai daiginjo made with Yamadanishiki, Japan's most prestigious sake rice, polished to daiginjo standards at one of the country's oldest breweries, founded in 1743 in Nada, Hyogo. The genshu treatment means no water is added after fermentation, producing a richer, more concentrated expression of the Yamadanishiki character. Hakutsuru's Rokko mountain spring water, low in iron and mineral-balanced, contributes to the sake's refined, clean backbone.
