Description

Gojo Shuzo was established in 1924 at the foot of Mt. Kongo in Gojo City, Nara, a prefecture historically regarded as the birthplace of Japanese sake, where Buddhist temple brewers developed the precursors to modern sake-making techniques during the Muromachi period. The Goshin brand name fuses the 'go' of Gojo City with 'shin,' meaning god, and the sake has been a fixture of local life for a century, informally called 'Goshin-san' by the city's residents. Every autumn, a toji travels from Tajima in northern Hyogo to lead the season's brewing through to April. The well on the brewery premises feeds the brewing water, and the surrounding Mt. Kongo range shapes the mineral character that defines Goshin's moderately dry profile.

The sake of this brewery, which is blessed with the soft water of the cold north wind and the Kongo mountain system, is the local area for many years. In recent years, I have been focusing on making Ginjo sake. We also use it at a top -notch hotel restaurant.
