Ginjo-grade sake from Sekishu Shuzo in Shimane Prefecture, where soft water with low mineral content allows slow, gentle fermentation that produces the region's characteristically mild and clean sake. Brewed under the Kasen label, this ginjo reflects the Iwami Toji tradition of Shimane, a region known as the birthplace of Japanese sake.

Tsuwano is nurtured in the history of 700 years and is full of historical emotions. Founded in the middle of the Edo period 1730. Currently, the 11th generation is working hard to make sake as a forest. Using the underground water of Hidemine Aonoyama, we continue to nurture the local sake spring in Tsuwano into the future with the old -fashioned method of using human hands.
