Kasen Tsuwanosakari is a junmai ginjo from Sekishu Shuzo in Shimane, using the local Saka Nishiki polished to 70%. Tsuiwano is a historic castle town in western Shimane, and this kasen-grade expression draws on the region's soft mountain water and Saka Nishiki character.

Currently, the 11th generation is working hard to make sake as a forest. Using the underground water of Hidemine Aonoyama, we continue to nurture the local sake spring in Tsuwano into the future with the old -fashioned method of using human hands.
