Ide Jozoten
Yamanashi
The Ide Brewery is the predecessor of soy sauce brewing, which started in the middle of the Edo period (around 1700). At the end of the Edo period (around 1850), Yogeemon, the 16th generation of our family, focuses on the cool climate at an altitude of 850 m and the abundant Mt. Fuji spring water. At the beginning, it has reached the present. It will be 21 generations in the current owner.
Mt. Fuji is famous as a mountain without a river. Even if the snow that has fallen in the winter melts, it is sucked into the lava layer and springs to the northern foot after several decades. "Bank of Sake Kai" is a liquor that the brewer is carefully brewed in the extreme cold, using water that springs out through the natural filtrate layer (lava layer).
