Description

This seasonal limited-release shiboritate (freshly pressed) nama genshu from Yano Shuzojo in Kunisaki, Oita, is an undiluted, unpasteurized sake bottled directly after pressing, capturing the raw intensity and concentrated character of the freshest possible state. The brewery presses using a traditional wooden fune (boat press), and the first cloudy fraction is cleared by settling before bottling. All sweetness comes from the rice itself, as the brewery uses no added sugars in any of its products.
