The Fumigiku Ginjo from this 1916-founded Toyama brewery demonstrates toji Keiki Hane's philosophy that daiginjo-level precision should apply to every grade, using hako-koji (box koji), nakadori-only pressing, and Joganji River water throughout the lineup. Smooth and composed, it offers the approachable depth of a ginjo crafted with the same exacting standards as a competition-grade daiginjo.
