
Yamada Nishiki polished to 60% is the base of this ginjo koshu (aged ginjo) from Fukudashuzo in Nagasaki under the Fukutsuru label. Long-term aging builds mellow, complex flavor over the ginjo foundation, and the brewing water draws from the sacred Yasumandake spring of the Hirado Kakure Kirishitan heritage site.
