Junmai daiginjo from the Denshin limited-distribution line, brewed from Koshi no Sizuku, a rare sake rice native to Fukui's Oku-Echizen region, polished to 45%. The brewery draws on subterranean water from Mt. Hoon-ji and pursues a house ideal of mizumizushii, karakuchi (lively and dry). White peach and lychee aromas are matched by a clean, crisp finish with lingering depth.
