
Description
Named for the Zen phrase meaning the highest truth and the ultimate wisdom, this daiginjo is produced by hanging the moromi in cloth bags and collecting only the sake that drips naturally under gravity, a method known as fukurozuri. Fukui's prized Sakahomare rice is polished down to 30%, yielding an extraordinary lightness and an elusive sweetness that fades gently on the palate. Only a limited quantity is produced each season due to the low yield of the drip method.
