Description

Daiginjo genshu drip sake made from Yamada Nishiki polished to 35%, produced by hanging the mash in cloth bags and collecting only the sake that falls under gravity without pressing, a method that preserves delicate aroma and purity. Brewed at the coldest point of the Hida winter using sake yeast No. 1801, the resulting sake carries a rich fragrance and full body with a crisp, clean finish. Kaba Shuzo, founded in 1704 in Hida-Furukawa, Gifu, ages this shizukuzake in ceramic bottles for added refinement.
