Ishikawamon, a sake rice variety developed in Ishikawa Prefecture, is used for this daiginjo from Nakajima Shuzouten in Wajima on the Noto Peninsula. Produced at a small, owner-toji brewery that sources rice, water, and brewing expertise locally, it reflects the distinctive character of the rugged Noto coastline.

I thought it would be nice to brew alcohol by local rice, water, and people in the area of Noseijin Island and be a local -oriented sake brewery.
It was fully achieved with 100 stones. In the earthquake, the warehouse was completely destroyed. I thought about going out of business, but we encouraged everyone and decided to build a new storehouse with support. Aiming to pursue quality, further desires came out, and at this time, we decided to introduce the latest equipment and resume sake brewing. I am confident in my arms. The warehouse is also new. You should be able to enjoy a liquor store in Wajima.
